The Foxtown Brewing Co. is the first new business on the planned 14-acre, mixed-use development on Mequon Road in Mequon, Wisconsin. Originally built as a brewery in the late 1800s, the structure is one of southeast Wisconsin’s oldest surviving brewing buildings. More notably, it’s one of very few remaining buildings in the country with underground storage caves for the lagering of beer. The two levels of beer caves under the facility will be open to the public as part of the brewery’s tour. The caves presented their own construction challenge, as it was necessary to vertically excavate down 20 feet within the building envelope to create a connecting stairway between the different levels of beer caves.
