Foxtown Brewery (UNDERWAY)
The Foxtown Brewery is the first new business on the planned 14-acre Foxtown mixed-use project at 6411 W. Mequon Road, in Mequon, Wisconsin. Originally built as a brewery in the late 1800s, the structure is one of southeast Wisconsin’s oldest surviving brewing buildings. More notably, it’s one of the last buildings left with underground storage caves for the lagering of beer. The two levels of beer caves under the buildings will be part of tours after the Foxtown Brewery opens. The caves present their own construction challenge: it will be necessary to jack-hammer a new stairway connecting the levels of beer caves. Work began in March, with completion planned by Thanksgiving.
